Serves 6

6 large zucchinis, grated using a julienne peeler or a spiralizer to form “noodles”

Sauce:

1 cup fresh basil leaves

4 cups kale leaves

4 squash, 2 diced, 2 roughly chopped

1/2 tsp turmeric

1/2 tsp smoked paprika

2 tsp mixed herbs

2 tbsp crushed garlic

2 x 410g tins of diced tomato with basil and garlic (avoid any with added sugar and other non-wholefood ingredients)

sea salt and cracked pepper to taste

Meat:

1 tsp olive oil

500g lean beef mince

1/2 Spanish onion, diced

2 medium carrots, grated

1 small head of broccoli, chopped into florets

1/4 capsicum, diced

Juice 1/4 lemon

1 tbsp nutritional yeast

Directions

In a large bowl, add sauce ingredients (save the two diced squash) and mix using a hand/stick blender (or high-speed blender) until smooth and there are only little bits of kale remaining.

In a pan over medium-high heat sauté onion with oil till soft. Add carrot and broccoli. Cook for 2-3 minutes. Add remaining squash, capsicum and minced. Cook until half of the mince has browned. Pour in the sauce and combine well. Cook on medium-high heat for 25-30 minutes until the sauce has reduced and thickened. Fold in lemon juice and nutritional yeast.

Plate up a large handful of zucchini noodles. Spoon mince mixture on top and garnish with extra basil (and nutritional yeast if desired). Serve hot.
