Due to popular demand, these little cups of joy, the Paleo nut butter cups, (and the fact I hadn’t written down the recipe previously!) made a return to my kitchen today.
Super simple, and very satisfying, plus you’re likely to have the ingredients in your cupboard already. They’re a low sugar, high-fat chocolate treat to curb your sweet tooth!
Gluten free, grain free, dairy-free, refined sugar-free, paleo, low fodmap
3 tbsp coconut oil, melted
1/2 – 1 tbsp maple syrup (or your sweetener of choice)
1 tbsp cocoa powder
Nut butter layer
2 tbsp of your favourite nut butter – I used Mayver’s peanut and coconut spread
1/2 tsp coconut oil
To decorate: crushed nuts – I used peanut
You’ll need 2 silicone muffin cups.
In a small bowl, combine coconut oil and maple syrup. Stir in cocoa powder.
Add one and a half tablespoons of chocolate into the base of each muffin cup. Place in the freezer to firm up.
In another small bowl, combine nut butter and coconut oil. Mix well.
Remove chocolate base from freezer. Add nut butter layer. Return to freezer to firm.
Pour the remainder of the chocolate on top and sprinkle with crushed nuts. Set in freezer for 1 minute. Enjoy!
