Paleo Macadamia Raisin Chocolate Fudge
A decadent fudge that will melt in your mouth, or your hands if you're not quick enough haha.
Gluten free. Dairy free. Refined sugar free. Enjoy in small doses.
- 1/2 cup nut butter (I used a mix of almond and peanut)
- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened cocoa/cacao powder
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1/2 cup macadamias, chopped (you may want to chop them smaller than what I did as they broke and made the fudge crumble in some places. Doesn't affect the deliciousness though!)
- 1/4 cup raisins
Note: you can use any kind of add-ins you like if macadamias and raisins aren't your thing.
Mix all except the add-ins into a bowl until well combined. Add the macadamias and raisins.
Pour into a container lined with baking paper. Mix ingredients around well so that they're evenly distributed. Place in the fridge to set.
Slice with a sharp knife to serve. Note: Serve fresh from the fridge as they will melt pretty quickly - especially in this Summer heat we're having! Enjoy!
