Mediterranean Grass Fed Beef Mince and Veggies

Comforting, full of flavour and oh so good for you!

This super simple dish is delicious, quick and loaded with nutrients: Tomatoes and paprika for eyesight, beef for iron, zinc and other essential minerals for energy and repair, kale for vitamin K, folate, vitamin C and A, eggplant for anthocyanins protective of brain function and supports heart health, plus turmeric for anti-inflammatory benefits!  

Ingredients

Gluten free. Dairy free. Paleo. Low Fodmap if you omit garlic. 

Serves 3-4

500g grass fed premium beef mince

1 japanese eggplant

5 leaves of tuscan kale, chopped

1 zucchini

2 whole tomatoes, chopped

1 cup diced tomatoes

1 tbsp smoked paprika

1/2 tbsp turmeric

2 shallots, chopped

1 tbsp crushed garlic

1/2 tbsp tamari

1/2 tbsp gluten-free Worcestershire sauce

Sea salt and black pepper to taste

olive oil for sauteeing

 

Directions

In a pan over medium-high heat, add oil and sauté the eggplant, shallots, garlic, and zucchini until tender, about 3-5 minutes. Add kale and mince. Add in garlic, spices, and sauces. Cook, stirring well, until mince is just cooked through.

Serving suggestions:

  • Fill hollowed out capsicums
  • A topping for savoury paleo pancakes
  • Folded into quinoa with extra veggies
  • In a warm salad
  • As a filling for wraps/crepes
  • With konjac noodles
