Chunky Monkey Protein Balls
No need for a jar of lollies when you have a glass full of these protein balls. Loaded with goodies that are perfect for a post workout treat or afternoon snack. cacao nibs for an energy boost, nuts to keep you feeling satisfied, protein from quinoa and your choice of protein powder to repair your muscles, omega-3 for your joints, potassium, and a little salt for an electrolyte boost, and natural sugar in the form of honey or maple syrup to replenish your muscle glycogen stores (aka. extend the 'pump' and get you ready for your next session).
Gluten Free. Refined Sugar Free. Dairy Free - All depending on your protein source!
1 scoop of vanilla protein powder - whey, pea, or brown rice - your choice. (Approx. 1/4 cup)
1 1/2 cups LSA (a combination of linseed, sunflower seed and almond meals)
1/2 cup quinoa flakes (or oats)
1/4 cup pecans (or cashews)
1/4 cup peanut butter (or almond butter)
1 tbsp maple syrup (or honey)
1 medium ripe banana
1 tsp cinnamon
2 tbsp cacao nibs
Optional - roll in desiccated coconut
In a food processor, blend all ingredients except the cacao nibs and pecans till well combined. Add in the pecans and cacao nibs and pulse till the mix starts to form a large ball and roll around inside the container.
Roll into balls.
I made 20 small ones.
If you're watching your calories - they come in at 98kcals each but this will change depending on your protein. Don't stress over calories more than the quality of your diet though. As long as you are being active, eating at least 90% whole foods, and really listening to your body you can lose the weight without religiously counting everything you eat.
