Thai-inspired Vegan Peanut and Tahini Sauce
Rich in zinc and magnesium, and a good source of calcium, iron, folate, and vitamin E. This sauce can be used as a delicious salad dressing, or a sauce for your favourite meat/protein source. It also packs in 9.6g of protein, and 4.2g of fibre. Not bad at all for a sauce!

1/4 cup peanut (or almond) butter
1/4 cup tahini
1/8 cup water
2 tbsp tamari
2 tbsp lime juice
1 tbsp crushed garlic
2 tbsp apple cider vinegar (or white vinegar)
1 tbsp maple syrup
1/2 tsp ginger
1 tsp chilli flakes
For the salad, per person
1 zucchini, in strips using a potato peeler
1 carrot, in strips
1/4 red capsicum, cut into thin strips
1 tsp black sesame seeds
1 tsp finely diced water chestnuts
Fresh coriander if desired
Combine all sauce ingredients in a bowl. Use your hands if necessary to get the tahini and nut butter to soften and blend. Pour 1/4 of the mix over the salad, or meat/protein of your choice.
