Friday Night In with Nikki and Leo from Liefje Chocolate

Please share a little about yourself:
Leo: I’m an Amsterdam girl, Dutch born and bred, now living in Melbourne for 5 years and loving it.
Nikki: I’m a mongrel Brit, half Portuguese mother, half French father. Maybe that’s why I feel so at home in the melting-pot of Australia.
How did your business come about?
Nikki: I was diagnosed with Chronic Fatigue three years ago and had to dramatically change my diet to heal my gut and rebuild my immune system. The one thing I couldn’t bear to give up was good dark chocolate. There are yummy raw choccies out there with no cane sugar, dairy or gluten, but none of them have the gloss, snap and slow melt in the mouth of a traditional fine chocolate and my body can’t handle agave, so Leo decided to see if she could make a fine chocolate I can eat, sweetened with organic maple syrup. Initially Leo made it just for us and for sharing with loved ones. Friends loved it and convinced us to turn our growing obsession into a small business dedicated to responsible luxury.
Where did ‘Liefje’ come from?
Leo: Liefje means sweetheart in Dutch and I started making chocolate for Nikki, my liefje. It’s pronounced leef-yuh by the way and it’s clearly a love project not a traditional business as we gave it a name everyone struggles to say!
The most rewarding part of your job?
Leo: That it doesn’t feel like a job.
Nikki: Creating something for ourselves, exactly the way we want it, following our hearts with no business plan that needs to be met or shareholders who need to be consulted.
What haven’t you done yet that you wish you could?
Leo: Right now is pretty amazing, but travelling through The Kimberly with a camper van is high on the wish list.
Nikki: I would love to visit the small farm in Peru where our fairly traded organic raw cacao comes from.
Favourite place in the world?
Leo: My bed.
Nikki: on a boat on the ocean. Any boat. Any ocean.
If you were a spice, which would you be?
That’s a tricky one, so we have answered for each other.
Leo is an ancho chilli. A fair bit of heat, but there’s way more to the flavour than just that.
Nikki is a spice blend - it changes slightly in every moment but never loses its distinctive character.
5 things you can’t live without?
Leo: Nikki, potatoes, chocolate, travel and sleep
Nikki: Leo, Sunlight, a feather pillow, a good book, cooking.
If you could choose to eat anything in the world for your next meal, what would it be?
Leo: Nikki’s crash potatoes
Nikki: Do I really have to choose?! Right now I’m thinking about the Portuguese Bacalau (salt cod) soup I’m going to make tomorrow, so that would be it. Nothing fancy, just good salt cod soaked for 24 hours, a basic soffritto, ripe tomatoes, a little dried chilli, homemade chicken stock and roughly chopped parsley.
What was for breakfast?
Quinoa coconut, vanilla porridge with spiced, stewed pears and a big sprinkle of our trademark organic hazelnuts roast in maple syrup with chilli salt. Plus a big cup of tea – which Nikki swears has magic properties.
How would you classify your eating style?
Gourmet-peasant. All about simple organic ingredients, in season, grown or bred locally without pesticides or antibiotics.
Your favourite way to stay active?
Walking the dog.
Your favourite Liefje chocolate flavour?
It depends on the day… Spice Trail melted in milk as decadent hot choccy on a Winter’s night, Hazelnut Crunch at the movies and Smoked Salt with a good glass of red wine.
Your best advice for living a wholesome, healthy lifestyle?
Don’t eat anything out of a jar unless you know the person who made it.
