Raw Fig, Vanilla and Coconut Tarts
A source of fibre, protein, healthy fats, iron, zinc, calcium and magnesium. This delicious little treat with soothe your sweet tooth and provide you with vital nutrients!

1 cup pepitas
1/4 cup shredded coconut
1 cup diced dried dates
1/4 cup Raw C coconut water
1/2 cup cashews, soaked in water till soft, drained
1/4 cup desiccated coconut
1 vanilla bean, de-seeded
2-3 tablespoons maple syrup (depends on your sweet tooth)
1/2 cup coconut water
1/4 cup coconut oil
Juice and zest of 1/2 a lemon
3 fresh figs
Process base ingredients together until slightly chunky but holds together when pressed with your fingers.
Press mix into 10 mini loose base tart cases. Dampen fingers if the mix starts to stick to you.
Set aside in the freezer to firm.
Combine cashews, coconut, vanilla seeds, lemon zest and juice in a high speed food processor. Add coconut water, oil and maple syrup. Blend until smooth. Pour into bases. Garnish each with a slice or segment of fresh fig. Place in the fridge or freezer to firm. If storing in the freezer, place in the fridge 30 minutes before serving to soften slightly.
