Hot, balmy Summer days in Australia call for a freezer stacked full of ice cream options. Not one Summer went by in my childhood that wasn’t down by the beach in Byron Bay, Evans Head, or Ballina. Now, living on the Sunshine Coast, I’m completely spoilt for choice with beach options.

They’re right up there in my top 3 with freshly baked white bread and buttery croissants for their enticing scent. They’re one of my most missed foods since going gluten free so many years ago, so I went and found the best recipes out there for us to enjoy!

Healthy desserts are my absolute weakness, but when I am constantly buying them out I cannot help but wonder how much sugar (refined or not) is actually being pumped into me. All in the name of “healthy” “raw” or “vegan” treats. It is usually around this time that I start to experiment at home because at least I will know what exactly is in them and I can easily adjust the sweetness to my own personal flavour.
When I lived in the Netherlands, Speculaas used to be my absolute favourite cookie to enjoy with a cup of tea. Then once I returned, thanks to food intolerances, I had to go wheat free so they were no longer an option.
I made these decadent little cupcakes for a Wholefoods House in-store tasting last week. They flew out the door! If you didn’t get a chance to try them, make some for your loved ones this Valentine’s Day instead. Best served gently warmed to make the most of that molten chocolate surprise inside!
