Paleo Pizza With Pesto Chicken, Pumpkin, Tomato And Rocket

2 cups almond meal

2 eggs

2 tbsp extra virgin olive oil

1 tbsp nutritional yeast (Optional. Adds cheese flavour and B vitamins)

2 tsp sea salt

Pumpkin Paste

1 cup cooked diced pumpkin, skin removed

1 tsp turmeric

2 tsp chopped fresh chives

1 tsp sea salt

1 tsp cracked pepper

1 tsp nutritional yeast (optional)

Basil Pesto – makes 1/2 cup

1 packed cup fresh basil leaves

1/3 cup extra virgin olive oil

1/4 cup nutritional yeast

1/6 cup pine nuts

1/8 cup cashews

1 1/2 garlic cloves (optional)

sea salt and cracked pepper to taste


2 large chicken breasts, diced

1/4 red capsicum, sliced thinly

6 cherry tomatoes, quartered

Nutritional yeast and fresh rocket to garnish


Preheat oven to 180 degrees C.

In a food processor, combine the base ingredients. Sandwich the base between two sheets of baking paper on the tabletop. Roll out into the base shape you desire, aiming for an even 5mm thickness. Transfer to a pizza tray or baking tray. Poke tiny holes using a fork all over the base so large air bubbles don’t form. Place in the oven to cook for 10 minutes or until the centre is firm.

Meanwhile, blend pumpkin ingredients using a stick blender, till creamy. Set aside.

Remove base from oven and set aside to cool slightly.

In a pan over medium-high heat, seal the chicken breast pieces in a little oil until all the sides are white, and each piece is semi-cooked (about 5-7 minutes). Set aside.

Spread the pumpkin paste over the base, and add the chicken, tomato and capsicum pieces.*

Place back in the oven for another 15 minutes until the chicken is slightly golden and the base is golden brown around the edges. Whilst the pizza is cooking, make the pesto.

Using a stick blender, combine all the ingredients together till it forms a thick paste. This recipe makes a thick chunky pesto for dolloping onto the pizza and using as a spread etc.  Add more oil if you prefer a smoother consistency.

Once the pizza is cooked, remove from oven. Dollop on some pesto, garnish with rocket leaves and sprinkle with extra nutritional yeast.

*Add cheese here if a pizza just doesn’t do it for you without. Skip the garnish of nutritional yeast if you use cheese.

Slice and serve hot. Enjoy,
